Dominique Moreau is an inspiring woman working the vines in an under rated region of Champagne called The Aube. Her tiny 2.5 hectare vineyard is located in the quaint village of Polisot. This is her Blanc de Blanc from barrel-aged Chardonnay. The Chardonnay comes from a single parcel of 15-20 year old vines. This Chablis like Champagne is lean, clean, well chiselled with intense minerality. It will make you fall in love this holiday season.
